Roasted Pulled Pork Tostada Cups

Ingredients:

1 Pack Corn & Wheat Tortillas

1 Cup Roasted Pulled Pork

1/2 Cup Bean Trio 

[Pinto, Kidney & Black Beans]

1/4 Cup Red Onion, Chopped

1/4 Cup Bell Peppers, Chopped

1/4 Cup Tomatoes, Chopped

Mexican Cheese Blend, As Needed

Cilantro, Chopped, As Needed

Red Radish, Chopped, As Needed


Preparation:

Preheat oven to 425°. Grease muffin pan with cooking spray or olive oil.  

Press tortillas into the pan to form a cup, pleating sides as needed. Cook for 10-12 minutes, or until cups start to brown. Allow cups to cool for 10 minutes.

Add roasted pulled pork, beans, red onion, peppers and tomatoes to cups. Top with shredded cheese and garnish with cilantro and radishes as desired.
