Artichoke, Spinach & Jalapeño Cream Cheese Dip/Spread

Have you ever had the Costco Artichoke & Jalapeño Dip?  If you have, your senses are probably going into over-drive because it was one of the best dips I have ever had.  My sister, Melissa, introduced it to me years ago and with her we could consume the entire container in one sitting (not recommended).  After looking at the food label, you would find that it was low in calories.  Although overall good, I wish it was higher in protein so I would feel fuller on less dip. You will find just that in this delicious recipe. Coincidentally, it is perfect for #sundayfunday shenanigans or for football parties!  

If you find yourself with leftovers, don't worry you can heat it up in the morning and then use it as a spread on your favorite bagel.  Many clients I speak with either skip breakfast or just drink coffee with a high carbohydrate, low-protein option.  Breakfast should be the highest caloric intake along with high protein and fiber to get your morning started.  With this recipe, you will feel full longer and curb cravings for sweets later in the day and evening.

Serves: 10

Ingredients

8-ounce cream cheese (227 grams)

1 cup fat-free Greek yogurt (240 grams)

2 cups of fat-free fresh mozzarella cheese, shredded (314 grams)

1/3 cup of shaved reduced fat Parmesan Cheese (23 grams)

1 14-oz canned artichoke, drained, cut in bite size pieces (241 grams)

3 1/2 cups of frozen spinach, thawed (284 grams)

2 cloves or 2 teaspoons of garlic, minced (5 grams)

2 stalks of or 1/2 cup green onions, chopped (22 grams)

5 pieces or 1/2 cup of canned jalapeño, minced (105 grams)

Instructions

1) Pre-heat oven to 350 degrees Fahrenheit

2) In a large bowl, electronically beat the cream cheese, yogurt, 1 cup of mozzarella cheese and Parmesan cheese until mixed throughout, evenly

3) Add other ingredients and then mix, evenly.

4) In a quarter-sized casserole spread dip

5) Add 1 cup of mozzarella cheese on top before baking for 40-45 minutes or until mozzarella cheese is browned

6) Serve hot with breads

7) Serve cold with fruits and vegetables
