Makes 3 slices of Pumpkin French Toast
For the batter:
● 2 tbsp pumpkin puree
● 1 large egg
● ½ tbsp sugar
● ¼ tsp vanilla extract
● ½ tsp pumpkin pie spice
● ¼ c milk
Other ingredients:
● 3 slices white bread (recommended: challah or brioche)
● Oil spray
Spiced maple syrup:
● 2 tbsp maple syrup
● ¼ tsp pumpkin pie spice
Additional toppings:
● Confectioners’ sugar
● Whipped cream
1) Combine pumpkin puree, egg, vanilla extract, sugar, milk, and pumpkin pie spice
2) Whisk until smooth
3) Heat a pan on medium heat and add a light coat of oil
4) Soak a piece of bread in the batter, coating all sides
5) Cook for ~1-2 minutes on each side
6) Repeat for every slice of bread
7) Serve with spiced maple syrup, and/or confectioners’ sugar, and whipped cream
8) If you want to add more plants to your pancakes, sprinkle your favorite crushed nuts like pecans or walnuts.
